BERRY COCONUT SLICE

INGREDIENTS
BISCUIT LAYER
50g oats, blended into flour
10g coconut flour
1/2 teaspoon baking powder
1 teaspoon stevia/natvia
50g desiccated coconut
30ml coconut oil, melted
100ml unsweetened almond milk
BERRY LAYER
250g frozen berries of choice
COCONUT LAYER
20ml egg whites
30g desiccated coconut
1 teaspoon stevia/natvia
DIRECTIONS
Preheat oven to 180 degrees
Combine all biscuit layer ingredients in a bowl and press into a tray
Bake in oven to 15-20 minutes or until browning
Top biscuit layer with frozen berries and bake for another 5 minutes
Press down berries to flatten them, then bake for another 5 minutes
In a bowl, whisk all coconut layer ingredients until fluffy
Top biscuit and berry layer, with coconut layer and bake for 10-15 minutes or until browning
Let cool before cutting
