BERRY COCONUT SLICE

TIME: 35-45 MINUTES

INGREDIENTS

BISCUIT LAYER

  • 50g oats, blended into flour

  • 10g coconut flour

  • 1/2 teaspoon baking powder

  • 1 teaspoon stevia/natvia

  • 50g desiccated coconut 

  • 30ml coconut oil, melted

  • 100ml unsweetened almond milk

BERRY LAYER

  • 250g frozen berries of choice

COCONUT LAYER

  • 20ml egg whites

  • 30g desiccated coconut

  • 1 teaspoon stevia/natvia

DIRECTIONS

  1. Preheat oven to 180 degrees

  2. Combine all biscuit layer ingredients in a bowl and press into a tray

  3. Bake in oven to 15-20 minutes or until browning

  4. Top biscuit layer with frozen berries and bake for another 5 minutes

  5. Press down berries to flatten them, then bake for another 5 minutes

  6. In a bowl, whisk all coconut layer ingredients until fluffy

  7. Top biscuit and berry layer, with coconut layer and bake for 10-15 minutes or until browning

  8. Let cool before cutting
