BLUEBERRY PIKELETS


SERVES: 1

TIME: 15-20 MINUTES

INGREDIENTS

  • 1 egg

  • 125g plain Greek yoghurt

  • 25g almond meal

  • Dash unsweetened almond milk

  • 1 teaspoon cinnamon

  • 150g blueberries

  • 3 teaspoons stevia (optional)

DIRECTIONS

  1. Combine all ingredients, except blueberries, in a bowl and mix through

  2. Fold through blueberries

  3. In a heated non stick fry pan, add 1-2 tablespoon serves of mixture

  4. Cook on one side, flip and cook on other side

  5. Continue until all mixture is used
