BLUEBERRY PIKELETS
SERVES: 1
TIME: 15-20 MINUTES
INGREDIENTS
1 egg
125g plain Greek yoghurt
25g almond meal
Dash unsweetened almond milk
1 teaspoon cinnamon
150g blueberries
3 teaspoons stevia (optional)
DIRECTIONS
Combine all ingredients, except blueberries, in a bowl and mix through
Fold through blueberries
In a heated non stick fry pan, add 1-2 tablespoon serves of mixture
Cook on one side, flip and cook on other side
Continue until all mixture is used
