ZUCCHINI FRITTATA


SERVES: 5

TIME: 30-40 MINUTES

INGREDIENTS

  • 4 eggs

  • 125g reduced fat ricotta cheese

  • 200g zucchini, grated

  • 2 cups spinach, chopped

  • 2 crushed garlic cloves

DIRECTIONS

  1. Preheat oven to 180 degrees

  2. Whisk eggs and garlic in a large bowl

  3. Add zucchini, spinach and ricotta and fold through

  4. Pour mixture into baking tray and cook in over for 20-30 minutes or until cooked through

  5. Let cool before cutting into serves
