ZUCCHINI FRITTATA

TIME: 30-40 MINUTES
INGREDIENTS
4 eggs
125g reduced fat ricotta cheese
200g zucchini, grated
2 cups spinach, chopped
2 crushed garlic cloves
DIRECTIONS
Preheat oven to 180 degrees
Whisk eggs and garlic in a large bowl
Add zucchini, spinach and ricotta and fold through
Pour mixture into baking tray and cook in over for 20-30 minutes or until cooked through
Let cool before cutting into serves
