APPLE CAKE
SERVES: 8
TIME: 20-30 MINUTES
INGREDIENTS
50g dates, soaked in hot water
80g desiccated coconut
30g walnuts
30g almonds
30g raisins
1 medium sized apple, chopped
1 teaspoon cinnamon
1 teaspoon vanilla essence
Icing:
150g light cream cheese
2 tablespoons sugar free maple syrup
DIRECTIONS
Place all ingredients into a food processor and pulse until smooth
In a lined tray, place mixture and press down flat and put in fridge for 5-10 minutes
In a bowl, mix the icing ingredients together and spread icing over cake
Place in fridge for another 15-20 minutes and let hardened slightly before cutting into pieces
