APPLE CAKE


SERVES: 8

TIME: 20-30 MINUTES

INGREDIENTS

  • 50g dates, soaked in hot water

  • 80g desiccated coconut

  • 30g walnuts

  • 30g almonds

  • 30g raisins

  • 1 medium sized apple, chopped

  • 1 teaspoon cinnamon

  • 1 teaspoon vanilla essence

Icing:

  • 150g light cream cheese

  • 2 tablespoons sugar free maple syrup

DIRECTIONS

  1. Place all ingredients into a food processor and pulse until smooth

  2. In a lined tray, place mixture and press down flat and put in fridge for 5-10 minutes

  3. In a bowl, mix the icing ingredients together and spread icing over cake

  4. Place in fridge for another 15-20 minutes and let hardened slightly before cutting into pieces
