RASPBERRY & WHITE CHOCOLATE MUFFINS
SERVES: 8 MUFFINS
TIME: 20-30 MINUTES
INGREDIENTS
2 scoops white chocolate protein powder
100g coconut flour
100g almond flour
1 teaspoon baking powder
10g flax meal
1 teaspoon stevia
1 egg
100g plain Greek yoghurt
1 teaspoon vanilla essence
100g frozen raspberries
DIRECTIONS
Preheat oven to 180 degrees
In a bowl, mix all dry ingredients
Add egg, yoghurt and vanilla and mix thoroughly
Add raspberries and fold through
Evenly distribute mixture into 10-12 muffins holes
Cook in oven for 10-15 minutes or until a skewer comes out clean
