RASPBERRY & WHITE CHOCOLATE MUFFINS


SERVES: 8 MUFFINS

TIME: 20-30 MINUTES

INGREDIENTS

  • 2 scoops  white chocolate protein powder

  • 100g coconut flour

  • 100g almond flour

  • 1 teaspoon baking powder

  • 10g flax meal

  • 1 teaspoon stevia

  • 1 egg

  • 100g plain Greek yoghurt

  • 1 teaspoon vanilla essence

  • 100g frozen raspberries

DIRECTIONS

  1. Preheat oven to 180 degrees

  2. In a bowl, mix all dry ingredients

  3. Add egg, yoghurt and vanilla and mix thoroughly

  4. Add raspberries and fold through

  5. Evenly distribute mixture into 10-12 muffins holes

  6. Cook in oven for 10-15 minutes or until a skewer comes out clean
