RASPBERRY OAT COOKIES


SERVES: 6 COOKIES

TIME: 20-30 MINUTES

INGREDIENTS

  • 30g oats

  • 20g almond meal

  • 1/2 teaspoon baking powder

  • 15g coconut oil, melted

  • 1 egg

  • Dash of vanilla essence

  • 125g fresh raspberries

DIRECTIONS

  1. Preheat oven to 180 degrees and line a tray with baking paper

  2. In a blender, place all ingredients, except raspberries, and blitz until smooth.

  3. Place mixture into a bowl and fold through raspberries

  4. Place tablespoon sized amounts of the mixture onto tray

  5. Bake in oven for 15-20 minutes or until cooked
