APPLE & CINNAMON MUFFINS

INGREDIENTS
3 Medium Granny Smith Apples, Finely Diced
100g Almond Meal
2 Eggs
125ml Unsweetened Almond Milk
1 Tablespoon Cinnamon
1 Tablespoon Baking Powder
1 Teaspoon Vanilla Essence
30g Coconut Oil
DIRECTIONS
Preheat Oven To 180 Degrees
In A Heated Pan, Add Diced Apples And Coconut Oil And Cook Until Soft
Add Cinnamon And Let Simmer For 2-3 Minutes
In A Bowl Mix Eggs, Almond Milk And Vanilla Essence
Add Almond Meal And Baking Powder And Stir Until Smooth
Fold Through Apple Mixture
Divide Into 8-12 Muffin Holes And Cook For 15-20minutes In Oven
