APPLE & CINNAMON MUFFINS


SERVES: 12 MUFFINS

TIME: 15-20 MINUTES

INGREDIENTS

  • 3 Medium Granny Smith Apples, Finely Diced

  • 100g Almond Meal

  • 2 Eggs

  • 125ml Unsweetened Almond Milk

  • 1 Tablespoon Cinnamon

  • 1 Tablespoon Baking Powder

  • 1 Teaspoon Vanilla Essence

  • 30g Coconut Oil

DIRECTIONS

  1. Preheat Oven To 180 Degrees

  2. In A Heated Pan, Add Diced Apples And Coconut Oil And Cook Until Soft

  3. Add Cinnamon And Let Simmer For 2-3 Minutes

  4. In A Bowl Mix Eggs, Almond Milk And Vanilla Essence

  5. Add Almond Meal And Baking Powder And Stir Until Smooth

  6. Fold Through Apple Mixture

  7. Divide Into 8-12 Muffin Holes And Cook For 15-20minutes In Oven
