CARROT CAKE

INGREDIENTS
3 medium carrots, grated
3 eggs
50g almond meal
2 teaspoons vanilla essence
50g crushed walnuts
2 teaspoons cinnamon
2 teaspoons nutmeg
2 teaspoon baking powder
DIRECTIONS
Pre heat oven to 180 degrees
Combine all ingredients in a bowl and stir until smooth
Pour mixture into a lined baking tray
Top with extra crushed walnuts if needed
Cook for 20-30 minutes or until skewer comes out clean
