CARROT CAKE


SERVES: 6 SERVES

TIME: 30-40 MINUTES

INGREDIENTS

  • 3 medium carrots, grated

  • 3 eggs

  • 50g almond meal

  • 2 teaspoons vanilla essence

  • 50g crushed walnuts

  • 2 teaspoons cinnamon

  • 2 teaspoons nutmeg

  • 2 teaspoon baking powder

DIRECTIONS

  1. Pre heat oven to 180 degrees

  2. Combine all ingredients in a bowl and stir until smooth

  3. Pour mixture into a lined baking tray

  4. Top with extra crushed walnuts if needed

  5. Cook for 20-30 minutes or until skewer comes out clean
