CARROT CAKE BALLS


SERVES: 6 BALLS

TIME: 15-20 MINUTES

INGREDIENTS

  • 50g pitted dates, soaked in hot water

  • 50g desiccated coconut

  • 100g carrot, grated

  • 1 teaspoon nutmeg

  • 1 teaspoon cinnamon

DIRECTIONS

  1. Place all ingredients into a food processor and blitz until smooth

  2. Slowly add water if needed until mixture is smooth and can ball

  3. Roll into teaspoon sized balls and place on lined tray

  4. Let set in fridge for 10-15 minutes
