CHERRY RIPE SLICE


SERVES: 16 SQUARES

TIME: 30 MINUTES

INGREDIENTS

Base:

  • 60g almonds

  • 20g cacao powder

  • 20g cacao nibs

  • 20g coconut oil, melted

  • 2 tablespoon sugar free maple syrup

  • Pinch Himalayan salt

Filling:

  • 200g fresh cherries, pitted

  • 60g desiccated coconut

  • 60g almond meal

  • 50g dates, pitted

  • 20g coconut oil, melted

Topping:

  • 20g coconut oil, melted

  • 30g sugar free hot chocolate

  • 30g sugar free chocolate, melted

  • 2 tablespoon sugar free maple syrup

DIRECTIONS

  1. Place all base ingredients into blender and blitz until smooth.

  2. Pour mixture into a lined tray and smooth out. Place in fridge while making filling.

  3. Place all filling ingredients into blender and blitz until smooth. Spread over base layer in tray.

  4. Place in freezer for 10-15 minutes or until hardened.

  5. In a bowl, mix all topping ingredients until smooth. Spread evenly over filling layer in tray. 

  6. Place back in freezer for 15-20 minutes or until set.

  7. Once set, cut into 16 even squares.
