CHICKEN CURRY
SERVES: 5 SERVES
TIME: 20-30 MINUTES
INGREDIENTS
500 chicken breast, diced
1 tin crushed tomatoes
500g pumpkin
2 onions, finely diced
3 cloves crushed garlic
1 tablespoon ground coriander
2 teaspoons cumin
1/2 teaspoon black pepper
1 teaspoon chilli powder
DIRECTIONS
In a fry pan, cook chicken, onion and garlic until cooked through
Add coriander, cumin, pepper and chilli and mix through
Add into crushed tomatoes and pumpkin and cook until pumpkin is soft
Let simmer for another 3-5 minutes
Divide into portions
