LEMON CHEESECAKE BALLS
SERVES: 12 BALLS
TIME: 15-20 MINUTES
INGREDIENTS
200g light cream cheese
100g desiccated coconut
Juice and zest of 1 lemon
2 tablespoon sugar free maple syrup
30g desiccated coconut to roll the balls in
DIRECTIONS
In a food processor place all ingredients and blitz until smooth
Make teaspoon sized balls with mixture, roll in extra coconut and place in lined container
Place in fridge for 10-15 minutes or until set
