LEMON CHEESECAKE BALLS


SERVES: 12 BALLS

TIME: 15-20 MINUTES

INGREDIENTS

  • 200g light cream cheese

  • 100g desiccated coconut

  • Juice and zest of 1 lemon

  • 2 tablespoon sugar free maple syrup

  • 30g desiccated coconut to roll the balls in

DIRECTIONS

  1. In a food processor place all ingredients and blitz until smooth

  2. Make teaspoon sized balls with mixture, roll in extra coconut and place in lined container

  3. Place in fridge for 10-15 minutes or until set
