LEMON CHEESECAKES


SERVES: 2 CHEESECAKES

TIME: 30-40 MINUTES

INGREDIENTS

  • 250g cottage cheese

  • 2 eggs

  • 1 tablespoon stevia/natvia

  • Juice of 2 lemons

  • Zest of 1/2 lemon

  • 1/2 teaspoon baking powder

DIRECTIONS

  1. Preheat oven to 180 degrees and grease 2 ramekin trays

  2. In a food processor, blitz cottage cheese and eggs until smooth

  3. Place in bowl, add the rest of the ingredients and mix 

  4. Divide the mixture between the 2 trays

  5. Place ramekin into a tray filled half with hot water

  6. Bake in oven for 20-30 minutes or until browning and set

  7. Remove ramekin from water in tray and let cool
