LEMON CHEESECAKES
SERVES: 2 CHEESECAKES
TIME: 30-40 MINUTES
INGREDIENTS
250g cottage cheese
2 eggs
1 tablespoon stevia/natvia
Juice of 2 lemons
Zest of 1/2 lemon
1/2 teaspoon baking powder
DIRECTIONS
Preheat oven to 180 degrees and grease 2 ramekin trays
In a food processor, blitz cottage cheese and eggs until smooth
Place in bowl, add the rest of the ingredients and mix
Divide the mixture between the 2 trays
Place ramekin into a tray filled half with hot water
Bake in oven for 20-30 minutes or until browning and set
Remove ramekin from water in tray and let cool
